Cardamom Pepper Cookies

Prep time: 20 minutes
Baking time: 10 minutes
Makes 24 cookies
2¾ cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
1 tablespoon ground cardamom
½ teaspoon ground black pepper
Dash of freshly grated nutmeg
12 tablespoons unsalted butter
(1½ sticks), room temperature
½ cup granulated sugar
½ cup packed dark brown sugar
2 large eggs
1 teaspoon vanilla extract
Glaze
1¼ cups confectioners’ sugar
2 tablespoons cognac
2 tablespoons cream
1. Preheat the oven to 350°. Whisk together flour, baking soda, salt and spices in a large bowl. Set aside.
2. With a mixer, cream together butter and sugars until light and fluffy,
2 to 3 minutes. Beat in one egg at a time. Add vanilla. Add flour mixture.
Mix until just combined and no flour pockets remain.
3. Roll rounded tablespoonfuls of dough into balls; place on a parchment-
lined cookie sheet 1½ inches apart. Bake 9 to 11 minutes, rotating the pan after 5 minutes, until edges are just set and middles are puffed.
4. Transfer cookies to a rack, and
cool thoroughly. Meanwhile, mix confectioners’ sugar, cognac and cream in a bowl. When cookies are cool, drizzle the glaze over them with a spoon.

The Double-Ginger Chocolate Chunk Cookie is fantastic! I'd first like to say I was out of cocoa but, in keeping with the "Cookies for Grown-Ups" theme, decided to experiment with flavored instant coffee. I think it worked out well. Aside from that, the creamy bursts of chocolate combined with the bits of candied ginger make for an indescribable delight. The sugar coating is a subtle finish to this scrumptious cookie. This recipe worked with my impromptu substitution. But now that I have cocoa, I can't wait to bake this cookie again. NOTE: Instead of selecting a jar of crystallized ginger from the spice aisle, venture over to the "ethnic" or "international" aisle of your local supermarket. I found it in a box at a greater than 50% savings. And if you have the fortune of access to an Asian market, it is sold by the pound for an even greater savings.
