I grew up in the South, and oh, how I love mashed potatoes, juicy steaks, and everything fried. It’s a good thing I played every sport imaginable from the ripe age of three, or I probably wouldn’t have been able to keep off the pounds. I love comfort food; if I had to eat one dish for the rest of my life, I would choose either mashed potatoes or knoephla soup.
For the sake of keeping things interesting, I’ll go with knoephla soup. (I’m sure everyone knows how to make a mean ’tater.) Knoephla (a type of dumpling) soup is a traditional German chicken-and-potato soup. After tweaking the recipe for a couple years, I’ve come up with the Deterding version, which I’m quite happy with.
I’ve been making knoephla soup with my mom since I was a kid. I know the recipe off the top of my head (not that it’s hard to make), and it’s something that all my friends have come to love and enjoy?not to mention they demand I make it for them. It’s great on a chilly day, or any day when you want to have an amazing, hardy soup.
I love whipping up a batch for dinner, dishing myself a bowl, cuddling with a blanket, and enjoying my yummy soup with a classic movie. No matter where I am in the world, the one thing that makes me feel at home is a bowl of knoephla.
Of course, it wouldn’t be considered comfort food if it were super healthy … so don’t try to count calories—just fix it up and enjoy!
