Escape to Rio
Based on Brazil's national drink, the caipirinha, this fruity brew is hot in Miami at any time of year.
2 ounces Leblon Cachaça
1 ounce fresh lime juice
¾ ounce simple syrup*
¾ ounce pineapple juice
Crushed ice
Fresh pineapple
Ground cinnamon
Combine ingredients, and shake with ice. Serve over fresh crushed ice in an old-fashioned glass. Garnish with a long rectangle of pineapple (a baton) and a sprinkle of ground cinnamon.
Cavalier
Inspired by the sidecar and Paris in the 1920s, a most soigné nightcap.
1½ ounces Cognac
¾ ounce Cointreau
½ ounce orgeat (or almond syrup)
¾ ounce fresh lemon juice
2 dashes orange bitters
Lemon peel
Combine ingredients, and shake well with ice. Strain into a martini or coupe glass, and garnish with a lemon spiral.
*Simple Syrup
Bring equal parts water and sugar to a boil. Let the sugar dissolve, and then let cool. ❦
