Established in 1973 by a registered dietitian, the nurturing one- to four-week program, limited to 42 guests, emphasizes the ­importance of eating ­mindfully—that is, slowly and with full awareness—rather than following a highly restrictive diet. Workshops like “Managing Binge Eating” and “Understanding Emotions That Lead You to Eat” help you overcome obstacles to slimming down. Set amid 250 acres of lush tropical gardens at the enormous Doral Golf Resort and Spa, the Pritikin Longevity Center & Spa offers a science-backed approach that stresses fiber-rich foods low in saturated fats. (Translation: lots of fruits, veggies, whole grains; not much meat or sugar.) You stay in either a standard hotel room or a more expensive spa suite. The week begins with a physical, blood work and a stress test, then a meeting with a trainer to define fitness goals.
